Learn how to make these pretty little North African pastries – as perfect for impressing visitors as they are as a gift when you’re doing the visiting!
Rachida Zitouni learned how to make these geometric Algerian delights as a child by her mother’s side, selling them at their popular stall in their local market in southwestern France. Now, she shares her traditional skills with you. Learn how to make:
- Cherek – a crescent-shaped crumbly biscuit filled with almonds and the heady flavours of cinnamon and orange blossom.
- Makrout – a diamond-shaped semolina pastry filled with dates, soaked in lush honey and decorated with a design of your own.
- Samsa – a triangular parcel of light, crispy pastry filled with almonds and drizzled with honey or syrup.
This session will also include tastings of the traditional mint tea that is the perfect authentic accompaniment to these pastries.
